Fastelavnsboller

I morgen er det Fastelavn & i den anledning vil jeg dele denne opskrift med jer. Jeg har selv lige lavet dem & de er blevet vildt gode! Man kan selvfølgelig også købe lækre fastelavnsboller hos diverse bagere, men jeg synes altså det er ret hyggeligt at lave dem selv, så kan man også pynte dem som man vil :-) Denne opskrift fandt jeg på nettet sidste år & jeg synes den er meget nem og overskuelig.

Giver ca 20 stk

Dej til fastelavnsboller
100 g smør
50 g gær
2 dl håndvarmt vand
2 æg (str M)
500 g hvedemel
1 tsk fint bordsalt
2 spsk lyst rørsukker
+ 1 æg til pensling

Kagecreme til fyld

40 g maizena majsstivelse
4 dl sødmælk
4 æggeblommer
4 spsk lyst rørsukker, med top (ca. 80 g)
korn fra 1 vaniljestang (eller 1 tsk vaniljesukker)
et nip salt

Chokoladeglasur til fastelavnboller
50 g god mørk chokolade
2 spsk kakao
200 g flormelis
4 spsk mælk
evt. sukkerglimmer & krymmel

Sådan laver du dejen: Smelt smørret og lad det svale. Rør gæren ud i det håndvarme vand. Tilsæt de to æg. Bland hvedemel, salt og rørsukker og tilsæt det til gærblandingen skiftevis med smørret. Ælt dejen godt igennem ved håndkraft eller i ca. 7-10 min ved medium hastighed på en røremaskine med dejkrog. Dæk dejen til med et fugtigt viskestykke og sæt den til hævning et lunt sted i ca. 40 min. til den er dobbelt størrelse. Lav i mellemtiden kagecremen.

Kagecremen: Rør maizenaen ud i en lille smule af mælken. Pisk derefter alle ingredienserne sammen i en tykbundet gryde og varm cremen op ved medium-høj varme under konstant piskning for at undgå at cremen brænder på. Når cremen tykner og begynder at slå tydelige bobler koges den igennem ved medium yderligere 1 minuts tid og tages dernæst af varmen. Hæld cremen ud på en flad tallerken og dæk overfladen til med et stykke husholdningsfilm. Lad cremen køle helt af inden den skal anvendes som fyld i fastelavnsbollerne. Når cremen er kold kan du med fordel piske den lind inden den fyldes i bollerne – det giver et ekstra godt resultat.

Rul dejen ud i lidt mel til en størrelse på ca. 50×40 cm. Skær 20 kvadrater á 10×10 cm og afsæt en spsk. kagecreme på midten af hvert kvadrat. Fold hjørnerne ind over midten og tryk dem godt sammen, så kagecremen lukkes inde i et hulrum. Forsigtigt trilles bollerne helt runde og placeres på en bageplade beklædt med bagepapir med samlingen nedad. Lad bollerne hæve yderligere 40 min. til dobbelt størrelse under et rent klæde. Pensl overfladen med lidt sammenpisket æg og bag fastelavnsbollerne midt i ovnen i ca. 12-15 min ved 200 grader varmluft til de er flotte og gyldne.

Chokoladeglasur: Hak chokoladen fint. Kom alle ingredienserne op i en lille tykbundet gryde og varm det op ved medium varme mens du rører. Når du har en tyk glasur er den klar til at komme på de afkølede fastelavnsboller. Pynt som du synes.

Whats not to Love about Cannes? I go here very often to relax and work, I just came home from the latest trip… oh god its cold in Copenhagen! This is my guide to some of the places that I love there! Hopefully the pictures will inspire you!   My View! Carlton is a Very beautiful Hotel in Cannes, Its placed at the “Promenade de la Croisette” (one of the famous streets in cannes), the view is stunning and its just opposite the beach. This street/promenade has all the expensive shops, restaurants and hotels. This place has really nice dishes for lunch and dinner… Le Cirque

  Fresh Fruit for Breakfast…yum!At Federal Vini Panini, you can grab a Delicious panini for Lunch or enjoy a Aperol Spritz or fine Wine during the whole day, they also serve great coffee and Croissants! Its really cosy & has nice vibes..
Uh la la one of my favorite treats when I visit France! Macarons from Ladurée, the lovely shop is at the famous shopping street Rue Antibes!
  I discovered this Make up brand KIKO which I had never heard about before, they have amazing stuff, I could buy everything!! Its actually an italian Make up brand founded in 1997. KIKO Milano vision is “Be what you want to be” . The shop is also located on Rue Antibes in Cannes.

I Love to go grocery shopping in the morning in Cannes, they have this big market “MARCHE FORVILLE“, with everything you can imagine! Veggies, Fruit, Meat, Fish, Poulet, Tapenade, Flowers… This is one the results from a home cooked meal with the fresh grocery!

  If you like icecream you have to visit this place! Glacier Vilfeu… its from a scene in Grease! Everything is baby pink, mint and neon lights.. and the icecream is spot on!
  Beach Outfit 😛Macarons from Jean luc pele, these where pretty but not as good as Ladurée!
Le pain Quotidien means “Daily bread”.Its a chain restaurant founded in 1990 in Brussels now its located all over the world! The french men eats a little bit weird for breakfast if you ask me 😛 Normally its coffee, cigarettes and a croissant. I like to get a nice start during the morning so I love to eat a healthy breakfast so I have a lot of energy for the day! I love this place!
The Steak N Shake has arrived in Cannes, it was founded in Illinois in 1934… their concept is really cool and the taste is fab too! Please come to Denmark! You should see their menu for Milkshakes.. its crazy! Ours was a Oreo Mint Shake:-P www.steaknshake.com
  
  Italian Gelato…. Crema di gelato

MY Favorite restaurant in Cannes is Italian… Funny right! DA LAURA Its small, cosy and the food is to die for! This is a must go to restaurant! During the busy summer season they are open for lunch and dinner.. But now its only for Lunch.. Its always really busy, but its worth waiting for.. if you come around 14 o’clock… its a bit less busy. This is the ravioli parma dish…. and the two desserts below is caramel & strawberry pana cotta.

Frankly Juice

Today is the 1st day of my 3 days juice detox cleanse & its also the first day of Senses “21 days Challenge”. (click on this link to read about the Challenge)

I have never been one of those, who can eat whatever they want, without gaining weight. I have to watch, what I eat & workout a lot to get/stay in shape. I enjoy sweets & I’m a foodlover.. BUT fortunately I LOVE to eat healthy & workout, so its not a problem for me at all :-) I live life to the fullest & I am not a fanatic. Every once in a while, I detox my body with a period with No sugar & Carbs for some weeks.. because I believe that its good for your body to be reset occasionally, for your health, body & mind. Sometimes I also enjoy to do a couple of days of Juice detox to Kickstart my healthy period & cleanse my body.. Its very important to know, that This juice detox is NOT about loosing weight, its only to kickstart my period. I would never recommend it, to loose weight.

Anyway.. normally I juice at home in my kitchen, which I really enjoy.. But right now Im busy working every day, so I need something thats easy for me to grab & go. So I chose to buy 5 different juices from FRANKLY JUICE. Frankly juice is based on cold pressed, in-season organic fruits and vegetables and nothing else. By cold pressing fruits and vegetables, they avoid destroying vital nutrients in their juices, and thereby ensure a living, honest and natural product.

For 3 days I will be enjoying 5 different juices a day. Its my own rules, during these 3 days. I can drink 1 coffee, all the water & pukka tea I want. If I experience any hunger, I can eat some nuts (ex. Almonds), no more than 15 a day.

In this very moment.. Im halfway on my 1st day & Im not hungry at all.. and the juices is SO delicious.. Right now Im drinking my 3rd juice of the day, which is really tasty : lemon, apple, lime, pineapple & chili. YUM

Hjemmelavede Fastelavnsboller

I dag er det Fastelavn & på denne søndag, skal vi naturligvis have hjemmelavede nybagte fastelavnsboller. Du kan selv nå at lave nogle & her er opskriften, som jeg har brugt:-)

De er virkelig gode!

Fastelavnsboller (18-20stk)

Dej:
40 g gær
150 g smør
1,5 dl mælk
4 spsk rørsukker
1 tsk stødt kardemomme
2 æg
ca. 450-500 g hvedemel
et nip salt & kornene fra en vaniljestang

CREME:
4 æggeblommer
30 g rørsukker
6 tsk hvedemel
4 dl mælk
Kornene fra en vaniljestang

REMONCE:
150 g rørsukker
150 g marcipan
125 g blødt smør

Smelt smørret sammen med mælk i en gryde, og hæld det over gæren, som røres ud deri. Sukker, kardemomme, æg og salt tilsættes og det hele røres godt sammen. Tilsæt mel indtil dejen bliver smidig og kan æltes uden, at den klistrer for meget, men pas på ikke at tilsætte for meget mel.

Lad dejen hæve i ca. 45 minutter – imens laves creme og remonce.

Alle ingredienser til vaniljecremen kommes i en gryde og varmes langsomt op under konstant omrøring, indtil cremen tykner. Når cremen har en god tykkelse, tages den af varmen og køles af, inden den skal i bollerne.

Rør sukker, marcipan og blødt smør godt sammen og stil det til side.

Når dejen har hævet, rulles den ud af flere omgange og skæres ud til små firkanter. Kom 1 spsk creme og 1 spsk remonce på hver firkant og fold alle fire hjørner ind på midten, så fastelavnsbollen lukkes godt, og indholdet ikke sniger sig ud.

Bollerne sættes med lukningen nedad på en bageplade – inden bollerne skal i ovnen pensles de med mælk eller æg, hvorefter de bages i ca. 12 minutter ved 200 grader, eller til de er gyldne.
Når fastelavnsbollerne er afkølede, pyntes de med tyk glasur & eventuelt pynt.
